Candied Carrots

A quick side dish. Sweet, buttery, done in under an hour.

Ingredients

  • 1 pound carrots, cut into 2-inch pieces
  • 2 tablespoons butter, diced
  • ΒΌ cup packed brown sugar
  • Pinch of salt
  • Pinch of ground black pepper

Directions

  1. Place carrots in a pot of salted water. Bring to a boil, reduce heat to a high simmer.
  2. Cook 20-30 minutes. Do not cook to mush.
  3. Drain carrots, reduce heat to lowest setting, return carrots to pan.
  4. Stir in butter, brown sugar, salt, and pepper.
  5. Cook 3-5 minutes until sugar is bubbly.
  6. Serve hot.
