A quick side dish. Sweet, buttery, done in under an hour.
Ingredients
- 1 pound carrots, cut into 2-inch pieces
- 2 tablespoons butter, diced
- ΒΌ cup packed brown sugar
- Pinch of salt
- Pinch of ground black pepper
Directions
- Place carrots in a pot of salted water. Bring to a boil, reduce heat to a high simmer.
- Cook 20-30 minutes. Do not cook to mush.
- Drain carrots, reduce heat to lowest setting, return carrots to pan.
- Stir in butter, brown sugar, salt, and pepper.
- Cook 3-5 minutes until sugar is bubbly.
- Serve hot.
